Raisin and Almond Chocolate Bark

Ingredients:

1/2 cup cacao butter cut in pieces (if you don't have cacao butter then coconut oil also work, slightly more oily)

1/2 cup raw cacao powder

1 tbsp tahini (sesame paste)

3-4 tbsp maple syrup/raw honey/coconut sugar

1 tsp pomegranate powder

pinch of sea/himalayan salt

 

Toppings:

sprinkle of sliced almonds, cacao nibs, raisins, quinoa puffs, other nuts and dried fruits work fine as well, be creative!

 

Instructions:

line a baking tray with baking paper

melt coconut oil in a saucepan over medium heat

whisk in the cacao butter, tahini and sweetener of choice.

keep whisking to prevent any lumps

stir in salt and pomegranate powder

keep whisking and remove from heat

set pan aside to slightly cool off for 5 minutes

pour mixture evenly onto the baking paper a think lay of 5-8 mm thick

scatter the toppings of choice over the chocolate mixture

cover with plastic wrap and put in freezer for at least 1 hour

break the chocolate off whenever you want a piece with your coffee or tea

keep in freezer at all times for freshness
