Ingredients:

1/3 heaping cup of finely shredded carrots, use a grater
1/2 cup Medjool dates, pitted
3/4 cup mixed nuts, walnuts, cashews, pecans
1 tsp vanilla extract
Pinch of sea salt
1/2 tsp ground cinnamon
1/4 tsp ground ginger
Pinch of nutmeg (optional)
2-3 tbsp coconut flour or almond flour
For serving: shredded coconut or coconut flakes

Instructions:
-Use a grater to grate the carrots and set aside.
-Add dates to a food processor and blend until it form a dough ball and remove.
-Add nuts, vanilla extract, salt and spices in a food processor and blend until a flour is formed.
-Add back in date dough ball, shredded carrots and pulse until a loose dough is formed. Don’t over blend.
-Use a cookie scooper or 2 small tbsp to 8 form balls using your hands.
-Roll in shredded coconut and enjoy right away.
-Store in an airtight container in the fridge or freezer for when you need a healthy sweet snack.
