Serves 4
Ingredients:
1 tbsp coconut or olive oil
2 cloves garlic, sliced
1 x 400gr can or packed chopped tomatoes
2 cups vegetable stock
1/2 small pumpkin of choice, peeled and chopped
1 tbsp cogon grass powder
Sea salt and black pepper to taste
Instructions:

Heat oil in a soup pan over medium heat.

Add garlic and cook until it becomes golden brown

Add tomatoes, stock, pumpkin salt and pepper and cook for another 12 minutes until all the tender and soft

Remove from heat and let it cool off before blending

Blend until smooth and enjoy!

Store in an airtight container and refrigerate up to 3 days.
