Tomato Pumpkin Soup

Serves 4

 

Ingredients:

1 tbsp coconut or olive oil

2 cloves garlic, sliced

1 x 400gr can or packed chopped tomatoes

2 cups vegetable stock

1/2 small pumpkin of choice, peeled and chopped

1 tbsp cogon grass powder

Sea salt and black pepper to taste

 

Instructions:

  • Heat oil in a soup pan over medium heat.

  • Add garlic and cook until it becomes golden brown

  • Add tomatoes, stock, pumpkin salt and pepper and cook for another 12 minutes until all the tender and soft

  • Remove from heat and let it cool off before blending

  • Blend until smooth and enjoy!

  • Store in an airtight container and refrigerate up to 3 days.

  • Enjoy!
