Ingredients:
For the crust:
1 cup almond meal or flour
3 tbsp coconut oil
2 tbsp maple syrup
1 tbsp java turmeric
Pinch of sea salt
For the filling:
1 pack (200 ml) coconut milk
Juice and zest of 3 limes (jeruk nipis)
1 tbsp coconut sugar (omit for non-sweetened filling)
Instructions:
-To make the crust l crust ingredients in a mixing bowl and use a spatula to combine and mix until a dough is formed.
-Divide mixture into 8 balls in a muffin tin (or silicon muffin cups) about 1 heaping tbsp each.
-Press the dough using your fingers to the sides to make little tart shells.
Freeze the shells in the freezer while you make the filling.
-To make the filling place coconut milk, lime juice and zest and coconut sugar in a mixing bowl until smooth and well combined, just like whipped cream.
-Fill each tart shell with the coconut filling adding zest on top and freeze for at least 1 hour.
-Scoop the tarts out the muffin tin and enjoy immediately. Store in fridge or freezer to kee their shape.
