Ingredients:
1/4 cup coconut oil
1/4 cup maple syrup or sub with brown rice syrup or raw honey
1 tsp baking powder
1 tsp ground turmeric
1 tsp ground cinnamon
1 cup rolled oats
1/2 almond meal or flour
1/2 desiccated coconut
Instructions:
-Preheat oven to 175C
-Line a baking tray with parchment paper
-In a mixing bowl add coconut oil, maple syrup or other sweetener of choice, baking powder, ground turmeric and ground cinnamon. Whisk until well combined
-Add rolled oats, almond meal and desiccated coconut to the mixing bowl.
-Stir with a spatula to combine, mixture should be sticky.
-Use your hand to roll 1,5 tbsp sized dough balls and flatten on the baking tray using your fingers.
-Bake for 15-20 minutes or until golden brown.
-Remove from oven and let it cool completely as they will crisp up.
-Keep the cookies in an airtight container in the fridge.
-Enjoy!
