Ingredients:
500 gram fresh young jackfruit
3/4 cup BBQ sauce (store bought or home made)
2 tsp moringa powder
2 tbsp maple syrup or honey
2 cloves minced garlic
2 tbsp tomato ketchup (optional)
2 tbsp coconut or olive oil (for cooking)
Instructions:
-Cook the jackfruit until tender and soft and drain
-Mix the BBQ sauce with rest of ingredients (except the oil) thinning by adding some water
-Heat a large skillet on high heat and add coconut/olive oil
-Add jackfruit and BBQ sauce and toss to coat for 2 minutes
-Add more water if too dry
-Cook for about 5 minutes for deeper flavor
-In the meantime prepare toasted bread, some coleslaw
-Remove lid from skillet and divide generously the pulled BBQ jackfruit on toast or bun and top with cole slaw for an amazing lunch or dinner!
-Enjoy!
