Ingredients:
Salad:
2 handful of Arugula, washed and drained
1 romaine lettuce, washed, chopped and drained
1/4 of red onion, sliced
6-8 kalamata olives (optional)
Turmeric tofu stir fry:
1 tbsp coconut oil
3 cloves garlic, cut or minced
1 tsp ground turmeric
1 cup of tofu, cut and drained
1 pack enoki mushrooms, washed, drained and cut in 3 equal parts
8 button mushrooms, washed, cut in quarters
2 tsp hoisin sauce
Salt and pepper to taste
Scallions (optional)
Instructions:
-Make the salad and mix all ingredients and plate it over a large plate
-Heat a medium size pan with coconut oil
-Fry the garlic
-Add tofu and stir fry for 1-2 minutes until golden brown
-Add mushroom mixture
-Stir fry for another 1 minute
-Season with hoisin sauce, ground turmeric, salt and pepper
-Turn of the heat
-Transfer tofu mixture on the salad and voila your healthy quick lunch or dinner is ready!
